Richmond has always had good taste. The leafy streets, the river, the park — it's a neighbourhood that has historically attracted people who care about quality. So it's no surprise that it has developed a genuinely strong specialty coffee scene over the past decade.

But what does "specialty coffee" actually mean? And how do you know when you've found a good cup?

What is Specialty Coffee?

Specialty coffee refers to coffee that has been grown, processed, roasted, and brewed with exceptional care at every stage of the supply chain.

The Specialty Coffee Association defines specialty coffee as beans that score 80 points or above on a 100-point quality scale — assessed for factors including aroma, flavour, aftertaste, acidity, body, and balance. In practice, specialty coffee means beans sourced from specific farms or regions, roasted to bring out their individual characteristics rather than to mask defects, and brewed with precision.

The difference in the cup is significant. A well-made specialty coffee has a clarity and complexity that commodity coffee simply cannot replicate — fruit notes, floral aromas, a clean, lingering finish.

What Should You Look For?

A few signs that a café takes coffee seriously:

Single origin options. If a café offers coffee from a specific farm or region — rather than just "house blend" — that's a good sign. Single origin coffees allow the barista to showcase the specific characteristics of the bean.

Pour-over or filter coffee. Espresso is the foundation of most café menus, but a café that also offers pour-over or filter brewing shows a deeper commitment to the craft. These methods tend to highlight the more delicate, nuanced qualities of the bean.

Staff who can talk about the coffee. Good baristas know their product. If the person behind the bar can tell you where the beans are from, how they were processed, and what flavour notes to expect, you're in the right place.

Freshly ground beans. Coffee begins to deteriorate within minutes of grinding. Cafés that grind to order rather than using pre-ground coffee produce a noticeably better cup.
