We are WOLK.
WOLK began as a labour of love inside our Richmond coffee shop at 16 Hill Rise — a neighbourhood spot where people came for specialty coffee and stayed for the cake.
Behind every cake is our pastry chef, who grew up in Ukraine surrounded by the kind of baking that doesn't come from recipe books — it comes from kitchens, from family, from memory. The Honey Cake and Napoleon are classics from that tradition: layered, patient, and made entirely by hand, exactly as they have been for generations.
Our story started in Istanbul in 2020, where we first opened our doors and began sharing these recipes with a new audience. Over six years, we refined every detail — the ratio of cream to pastry, the resting time, the temperature of the oven. When we brought WOLK to Richmond, we brought everything we had learned.
The Basque Cheesecake is a different story. It began as an experiment — our pastry chef's own recipe, developed and refined over years until it became what it is today: deeply caramelised on the outside, impossibly creamy within. It is not a traditional Ukrainian recipe. It is entirely ours.
Every cake we sell is made from scratch, by hand, in our Richmond kitchen. No shortcuts. No pre-mixes. No preservatives. Real butter, fresh eggs, and six years of knowing exactly what we are doing.
Our menu is deliberately small. We make four things — Basque Cheesecake, Honey Cake, Napoleon Cake, and Cinnamon Buns — because we would rather do a few things exceptionally well than many things adequately. Each one is made to order, for you.
